Tokara, located on the slopes of the Simonsberg Mountain in Stellenbosch, is known for producing premium wines that showcase the unique terroir of the region.
The Director's Reserve Red 2020 is a testament to this winemaking legacy, crafted from meticulously selected grapes, harvested between February 19 and March 16, 2020.
The winemaking process involves:
- De-stemming of grapes, followed by mechanical and hand sorting to ensure only the finest fruit is used.
- Fermentation in stainless steel and wooden upright (foudre) fermenters, with regular punch-downs and pump-overs to enhance flavor extraction.
- Malolactic fermentation in barrels, followed by 22 months of maturation in French oak barriques (44% new oak, 33% second-fill, remainder older oak).
- Bottled in January 2022 without fining or filtration, preserving purity and complexity.
This careful aging process results in a wine of exceptional balance, depth, and longevity.
