Kanonkop Paul Sauer 2022 brings together 55% Cabernet Sauvignon, 27% Cabernet Franc and 18% Merlot from the Simonsberg area of Stellenbosch. The estate’s technical sheet puts the vines at an average age of 30 years and describes vineyards rooted in decomposed granite and other local soils. Following fermentation in open concrete vessels, the wine spent 24 months in new French Nevers oak barrels. That patient maturation lends depth to a blend whose dark fruit, fragrance and fine tannins remain clearly in view.
Paul Sauer is Kanonkop’s flagship Bordeaux-style red, first released from the 1981 vintage and named for the estate’s patriarch. The first wines carrying the Kanonkop name came from the 1973 vintage. Today the fourth-generation family estate is in the hands of brothers Paul and Johann Krige. Its place on the Simonsberg gives this wine a distinct Stellenbosch setting, while the family history gives the bottle a story worth opening alongside it.
Bring it to the table when the conversation has time to unfold. Pour a glass, settle in and let each sip reveal another detail.
TASTING NOTES
Kanonkop Paul Sauer 2022 opens with cherry and cassis aromas, followed by cedar, tea leaf and a gently savoury note. Dark berries and plum come through on the palate, with rose petal and toasted oak adding detail. Its acidity keeps the fruit lively, while fine-grained tannins give the wine shape. The finish is long and composed, making this a red to savour rather than hurry.
FOOD PAIRING
Serve with grilled ribeye steak for its richness, slow-cooked beef casserole for its savoury depth, or roast leg of lamb for a generous Sunday meal. Mature Cheddar also makes a fitting match for the wine’s structure.
