Description

Ernie Els Wines Signature 2022 begins on the estate’s north-facing Helderberg slopes in Stellenbosch. Cabernet Sauvignon makes up 60% of this five-variety Bordeaux-style blend, joined by Merlot, Cabernet Franc, Malbec and Petit Verdot. The grapes were picked by hand in the cool of the morning, then fermented as whole berries in concrete tanks. Each variety was matured separately before blending; most of the wine spent 18 months in French oak, while a 15% portion spent eight months in terracotta amphorae. It is a carefully assembled red with room for both dark fruit and floral detail.

The Signature range reaches back to the estate’s first vintage in 2000, and its grapes come exclusively from the property. Ernie Els began pursuing his interest in wine in 1999; the winery opened in 2005. Winemaker Louis Strydom brings his long experience in the Helderberg to a range particularly focused on Cabernet Sauvignon. This is a wine rooted in a specific place and shaped by patient blending.

Bring a bottle to the table when supper calls for a little time. Pour it alongside a generous dish, let the conversation settle, and return to the glass as its darker and more delicate notes emerge.

TASTING NOTES
Ernie Els Wines Signature 2022 opens with rose and violet scents over cedar and a darker, inky note. Plum and lively red fruit shape the palate, followed by allspice and a savoury edge. Silky tannins carry the wine towards a dry finish marked by black cherry and cassis. Its floral lift makes an intriguing contrast with the depth of fruit.

FOOD PAIRING
Serve with roast venison and beetroot: the meat suits the wine’s savoury depth, while beetroot picks up its fruit. Rosemary-roasted lamb offers a similarly rich match. For a slower supper, try braised beef cheeks, whose soft texture meets the wine’s firm tannins.
