Go to the shopTokara Reserve Collection Elgin Sauvignon Blanc 2025 draws its character from Elgin, where its vineyards grow in sandstone over granite soils. It is made entirely from Sauvignon Blanc and was aged on its lees in stainless steel. That approach leaves room for the site to speak: the wine’s stony aromas and citrus flavours sit alongside the brisk acidity Tim Atkin MW found in his review. It is a distinctive choice for anyone drawn to the more restrained side of Sauvignon Blanc.
Tokara’s home is on the slopes of the Simonsberg near Stellenbosch, while the grapes for this wine come from its Highlands farm in Elgin. The family-owned estate takes its name from Thomas and Kara, the founders’ children. Winemaker Stuart Botha places particular emphasis on the character of individual vineyard sites, an outlook that feels apt for a Reserve Collection wine shaped by its Elgin origins.
Bring a bottle to the table as the first plates arrive. Its focused, dry finish invites another sip between bites and keeps the conversation moving.
TASTING NOTES
Tokara Reserve Collection Elgin Sauvignon Blanc 2025 is measured rather than exuberant. Its aromas suggest wet stone and hedgerow, followed by lime and gooseberry on the palate. Bright acidity keeps the fruit sharply defined, while a pithy, dry finish leaves a clean impression. The result is a Sauvignon Blanc with freshness, restraint and a distinctly stony edge.
FOOD PAIRING
Try fresh oysters for a briny contrast to the wine’s lime and stony notes; grilled yellowtail with salsa verde for its lively acidity; or a goat’s cheese salad for a crisp counterpoint to the creamy cheese.
