Kanonkop Paul Sauer 2023 is a Stellenbosch Bordeaux-style red made from 62% Cabernet Sauvignon, 23% Cabernet Franc and 15% Merlot. The grapes spent five days fermenting in open concrete vessels before the finished blend matured for 24 months in new French oak barrels. It is a distinctive meeting of Cabernet-led fruit and traditional cellar work, shaped by a growing season that brought both humidity and rain at harvest.
The wine bears the name of Paul Sauer, the first owner of the land that became Kanonkop. Today the estate is in the hands of brothers Johann and Paul Krige, the fourth generation of the family. Kanonkop first bottled wine under its own label from the 1973 vintage; the first Paul Sauer followed in 1981. That history gives this release a place in a long-running Stellenbosch tradition, even as the 2023 season left its own mark.
Bring a bottle to the table for a slow dinner and give it room to open in the glass. Its fruit, oak and savoury edges offer plenty to talk about over a second pour.
TASTING NOTES
Kanonkop Paul Sauer 2023 brings blackcurrant to the fore, with floral hints and a cigar-box note drawn from the estate’s description of the wine. Its time in new French oak contributes to a structured palate, while the estate describes this vintage as particularly fresh and precise. The result is a red with fruit and savoury detail rather than sheer weight.
FOOD PAIRING
Serve with beef bourguignon, whose slow-cooked richness suits the wine’s tannins; roast lamb, which works with its savoury side; or mushroom and lentil pie, which lets its fresh fruit notes come through.
