Introduction:
The 2021 Chenin Blanc has a detailed, finely delineated nose, delicate touches of orange blossom and jasmine emerging with time in the glass. The palate is well balanced, taut and linear, with fine acidity – almost crystalline. Discreet touches of mandarin and passion fruit develop toward the racy finish. Understated and classy.
Winemaker’s Notes:
The grapes were handpicked from cool climate vineyards in Walker Bay. The grapes were then whole bunched pressed, slowly extracting the juice at 600lts per ton. The juice was settled over night and racked into 400l barrels and two new 500L barrels, where natural fermentation occurred. Wine spent total of 11months on lees.
Wine Making Aesthetic:
Balance is the key to this wine. The firm acid backbone and intense fruit will allow this wine to integrate beautifully and gain further complexity over the next 3-5 years.
