The Hooiwijn is crafted from 100% Chenin Blanc grapes sourced from certified heritage bush vines planted in 1986 and 1988. These unirrigated, dry-land farmed vines thrive at an altitude of 520 meters above sea level in deep sandy soils, benefiting from a warm climate tempered by cooling evening winds. The grapes are harvested over six dates and dried on straw mats for three weeks to concentrate sugars and flavors. After gentle pressing, fermentation is stopped at approximately 10% alcohol, and the wine matures in seasoned 500-liter French oak barrels for six months.
A luscious, sun-drenched wine with aromas of dried apricot, mango, candied pineapple, jasmine, and honeycomb. The palate is rich yet balanced by bright acidity, with lingering flavours of apricot and a delicate touch of sun-dried straw adding elegance and depth.
