levels that retained a natural freshness.  50% whole bunch fermented in small batch vats with gentle punch downs twice a day and then finished with a 14-day extended maceration before the free run juice was drained and the skins and whole bunches were pressed in a traditional wooden basket press.  The process allowed for a long and gentle extraction period which softens the wine and lends to the fruit expression and structure.  The wine was racked into 225, 300 and 500 litre barrels where malolactic fermentation took place, and the wine was aged for 12 months.   20% new French oak was The maritime vineyard enjoys a long ripening season, because of the strong cooling winds that are prevalent in the summer. This microclimate is ideal for creating a long hang time, concentrating the flavours in the berries, while retaining natural acidity levels. Kaaimansgat is situated 700m above sea level and its continental climate allows for perfect winter dormancy, and ripens even later than the coastal vineyards. These\u003cbr \/\u003e\r\nvineyards were planted on the rocky bedrock of decomposed Mica-Schist, a unique terroir, finding its\u003cbr \/\u003e\r\nexpression in our concentrated and structured wines made from this Rhône grape.\u003cbr \/\u003e\r\nThe 2019 vintage was one of our earliest Swartland pickings to date, with our Syrah harvest commencing\u003cbr \/\u003e\r\nduring the last week of January. Our vineyards were exposed to extremely dry conditions during flowering,\u003cbr \/\u003e\r\nresulting in early set and bud break. Compared to previous vintages, the dry conditions resulted in small,\u003cbr \/\u003e\r\ncompact berry clusters, hence the early picking dates and reduced yields.
